Fermented Foods for the Holidays – Chicagoland

  • Incorporating cultured and fermented foods into your favorite holiday dishes is easy. With a few small adjustments and substitutions, your family can enjoy a more nutrient-dense meal complete with a probiotic boost.
  • Lacto-fermentation is an ancient preservation method that greatly increases the vitamins in vegetables and other foods, and also makes the minerals more available. The food is preserved for a long time by the lactic acid produced during the fermentation process. Many fruits, vegetables and dairy products can be fermented. Fermented foods are bursting with enzymes and ‘good’ bacteria and are very beneficial for your health…and they are tasty too!
  • In this class you will learn about the history and the benefits of fermented foods.  You will learn what is needed to make fermented foods at home.  You will also learn some simple recipes that you can easily make in your own kitchen.  
  • You will receive all session notes, several recipes and (if you purchase the fermenting kit) will be able to take home 2 jars of fermented goodies to enjoy in your home!  Recipes demonstrated and tasted will include: cranberry chutney, salad dressings, holiday kraut, dilly beans and carrots and kefir ranch dip. 

Class is $75 and the recommended fermenting kit is $20.  In the kit you will get 2 packets of starter, 2 pint size jars, a food funnel and fermentation weights.  You will also be able to take home the cranberry chutney and holiday kraut if you have the kit!
