The other day I was looking at a beautiful bowl for garden fresh tomatoes and cucumbers and was inspired to make a true Greek salad, taking me back to our wonderful family vacation to Greece

There is nothing tastier than garden fresh tomatoes, in my opinion!  And a true Greek salad is different than the ones we get here in the States.  I had no idea until I got there that that was true!

In Greece, a Greek salad has NO lettuce!  It is just a bowl of cut tomatoes, cucumbers, maybe a few thinly sliced red onions, olives with some fresh oregano.  Topped with a hunk of feta cheese and a drizzling of beautiful olive oil and salt and pepper to taste, of course served in a shallow bowl.

One of our best food memories from Greece was sitting in a square with our hired driver, Makis, in the town of Meteora.  We enjoyed a wonderful lunch and ate this delicious salad in the sunshine!

I had been wanting to make it ever since we got back but needed to wait until I had some good, fresh tomatoes!  You can't get any more ‘real food‘ than this!

I had tomatoes and oregano from my home garden.  Cucumbers, onion and feta cheese from my CSA program and I was ready to go!!

Give it a try and tell me what you think!  You can serve it with a side of crusty bread but we just ate it as is!

  • Add minced oregano to top
