Is your garden overflowing with leafy greens? Do you have extra CSA or Farmer’s Market greens withering away in your fridge? I can answer yes to both of these questions! I hate wasting food, especially precious locally grown, organic produce!
But sometimes, enough is enough! I can only cook and juice so many greens!
What can you do to save these greens? Well you can freeze or use them for juicing or smoothies, of course. I do this but sometimes I like to try something else. I like to make my own green powder!
Green vegetables have so many health benefits, including providing numerous vitamins and minerals, helping to alkalize the body and boosting your immune system! Don’t let those greens go to waste!
The process couldn’t be simpler if you have a dehydrator!
Make Your Own Green Powder
First take your greens and give them a good wash. Lay them in a single layer on the dehydrator sheets.
Dehydrate at 90 degrees overnight, until completely dry. You want to be sure they are thoroughly dehydrated or your powder will get moldy!
Once dry, remove from the dehydrator.
Add the dried greens to your Vitamix or food processor and blend until a fine powder.
Pour into a mason jar and store! Will last well over a year, if you thoroughly dried the greens.
