Ingredients

gallon
fresh apple cider
preferably local and unpasteurized

cinnamon sticks

star anise

cloves
8
allspice berries
cracked

cardamom pods
cracked
Instructions
Simmer all ingredients over low heat for at least 2 hours.
Strain the solids from the cider and serve in mugs with cinnamon sticks as a functional garnish that doubles as a stirring stick
Notes
Spiked Version:
Add 1 1/2 ounces of Applejack or Calvados to a mug of hot cider.
Garnish with cinnamon stick.
