I may leave out half the egg yolks. Had a Fritatta a friend’s husband made us where he used 2 whole eggs and 4 egg whites with spinach & herbs. Very light and YUM! I had sworn off eggs due to the problem of how laying hens are mistreated and really abused – cannot even turn around. Then I thought organic was OK until I learned that means simply no animal fat or byproducts in their feed. I think freely roaming organic eggs are humane although PETA says no eggs are humanely produced.
