Luau Baked Beans

Ingredients
  

  • 3/4 cup organic ketchup or homemade
  • 3/4 cup organic barbecue sauce or homemade
  • 1 tbsp dijon mustard
  • 3/4 cup maple syrup
  • 2 tbsp dark rum
  • 2 tbsp chopped cilantro or Italian parsley
  • 3 tsp chili powder
  • 2 cloves minced garlic
  • 1 tsp cumin
  • 2 15 oz cans organic cannelini beans (drained and rinsed)
  • 2 15 oz cans organic Great Northern beans (drained and rinsed)
  • Even better to use dried beans 1 cup each, soaked overnight, then cooked to make more digestible and nutritious.
  • 1 cup diced fresh pineapple
  • 1 large onion diced
  • 8-16 oz ground beef
  • 8 oz bacon cut into small pieces
  • sea salt and pepper

Instructions
 

  • Preheat oven to 350.
  • In a large bowl, mix: ketchup, barbecue sauce, mustard, rapadura/maple syrup, rum, cilantro, chili powder, garlic and cumin.
  • Fold in the beans and pineapple.
  • Heat a saute pan over medium heat.
  • Add bacon and beef.
  • Midway through the cooking add the onions.
  • Cook until meat is browned and onions are getting translucent.
  • Add beef, bacon, onion mixture to ketchup/bean mixture with a slotted spoon.
  • Spoon in a few tbsp (or more) of the cooking fat!
  • Pour entire mixture into an 8x8 baking dish.
  • Bake, covered, at 350 for 2 hours.
