Cucumber and Red Onion Salad

  • Toss the cucumbers and onions in a bowl.
  • Add 2 tbsp rice vinegar.
  • Add 1 tsp of sugar and mix.
  • Taste and add a bit more sugar if needed.
  • Salt and pepper to taste.

Notes

This salad tastes delicious when it is allowed to marinate for a couple hours! Make a big batch and you can eat it all week!
You can add as much vinegar and sugar as you like. If you like it sweeter, add more sweet! More sour, add more vinegar!
I like to sometimes add a splash of olive oil as well!
