Gooseberry Cobbler

A delicious summertime treat if you are lucky enough to have access to gooseberries!

Ingredients
  

  • 1/2 cup butter
  • 1 quart gooseberries
  • 1/4 cup white whole wheat flour
  • 1/2 cup water
  • 1/2 to 3/4 cups sucanat or organic cane sugar
  • Topping-
  • 1 cup white whole wheat flour
  • 1 cup sucanat or organic cane sugar
  • 1 tbsp coconut oil or melted butter
  • 1 egg

Instructions
 

  • Melt butter and pour into baking dish (I like 8x8 size)
  • Stir in sugar and flour and water
  • Add berries
  • Mix topping ingredients in a separate bowl, until crumbly
  • Drop topping onto berries.
  • Bake at 375 for about 40 minutes until bubbly and brown
  • If topping starts to brown, cover with foil
