Gooseberry Cobbler
A delicious summertime treat if you are lucky enough to have access to gooseberries!
- 1/2 cup butter
- 1 quart gooseberries
- 1/4 cup white whole wheat flour
- 1/2 cup water
- 1/2 to 3/4 cups sucanat or organic cane sugar
- Topping-
- 1 cup white whole wheat flour
- 1 cup sucanat or organic cane sugar
- 1 tbsp coconut oil or melted butter
- 1 egg
Melt butter and pour into baking dish (I like 8x8 size)
Stir in sugar and flour and water
Add berries
Mix topping ingredients in a separate bowl, until crumbly
Drop topping onto berries.
Bake at 375 for about 40 minutes until bubbly and brown
If topping starts to brown, cover with foil
