Luau Beans – a favorite summer barbecue side

I love baked beans. I love sweet baked beans, savory baked beans, meaty baked beans.
They just remind me of summer…of barbecues…of paper plates and watermelon and grilled (grass fed) hamburgers.
I have had some great baked beans over the years. My mom made a delicious, sweet version that we used to scoop up with potato chips (yes, sounds weird…try it! It's divine!).
I never really made my own until I got a recipe from my friend, Michelle, after we had these baked beans with pineapple at her house. They were delicious and I couldn't wait to make them (with some Real Food twists, of course!)
These were called Luau Beans and there are a lot of ingredients but they all work together to make just a little bit of heaven. The sweetness of the pineapple and the savoriness of the meat and bacon just combine so well!

Luau Baked Beans
Ingredients
- 3/4 cup organic ketchup or homemade
- 3/4 cup organic barbecue sauce or homemade
- 1 tbsp dijon mustard
- 3/4 cup maple syrup
- 2 tbsp dark rum
- 2 tbsp chopped cilantro or Italian parsley
- 3 tsp chili powder
- 2 cloves minced garlic
- 1 tsp cumin
- 2 15 oz cans organic cannelini beans (drained and rinsed)
- 2 15 oz cans organic Great Northern beans (drained and rinsed)
- Even better to use dried beans 1 cup each, soaked overnight, then cooked to make more digestible and nutritious.
- 1 cup diced fresh pineapple
- 1 large onion diced
- 8-16 oz ground beef
- 8 oz bacon cut into small pieces
- sea salt and pepper
Instructions
- Preheat oven to 350.
- In a large bowl, mix: ketchup, barbecue sauce, mustard, rapadura/maple syrup, rum, cilantro, chili powder, garlic and cumin.
- Fold in the beans and pineapple.
- Heat a saute pan over medium heat.
- Add bacon and beef.
- Midway through the cooking add the onions.
- Cook until meat is browned and onions are getting translucent.
- Add beef, bacon, onion mixture to ketchup/bean mixture with a slotted spoon.
- Spoon in a few tbsp (or more) of the cooking fat!
- Pour entire mixture into an 8x8 baking dish.
- Bake, covered, at 350 for 2 hours.

These look great… we don’t use alcohol… can you suggest a substitute for the rum?

Because the beans have a small amount of rum, is it safe for children to eat as well?
Yes. Alcohol cooks of when you heat it. Adds a rich flavor. You could also leave it out if it is a big concern.
