Fermented Apple Juice

You know that Oh Lardy LOVES fermented foods! We try to eat them daily to add probiotics to our diet and maintain a healthy gut.
It is especially fun to branch out and experiment with drinks. We can't get enough of kombucha, fermented orange juice, beet kvass, lemonade.
I was looking for something different, something seasonal to ferment and while flipping through the Nourishing Traditions cookbook, came across fermented apple juice.
I decided to tweak the recipe a bit and give it a go.
And…SUCCESS! It was delicious. A buttery, slightly fizzy, probiotic rich drink. My daughter loved it! We tried it plain and we also mixed with sparkling water. Both were amazing.

i have made the apple juice..now do you think i can try it with homemade cranberry juice? it wont spoil if i try?
PS i made the apple juice with probiotic pills as someone suggested, because i didnt have whey.
I would think that would work fine. I ferment apple juice, lemonade and fresh orange juice. Please comment and let us know how it turns out!!!
First, your site was the best read of all I did read. Thanks for that ! I was wondering if you can make a bigger batch and preserve it somehow, such as canning maybe ? My husband said maybe freezing ?

You can not can as the heat will kill the good bacteria. Freezing is an option. I have made popsicles with fermented juices but have never fermented in large quantities before!
I have a ten ltr jug full of pressed pasteurised apple juice. After one week it fermented at room temperature without me adding any whey or yeast. It tastes like Appletiser. Is it healthy to drink? And, if so, will it keep at room temperature or should I put it in the fridge or freezer?

Hi I loved the fermented apple juice it’s so refreshing , that’s for the recipe , I used couple of probiotics capsules as I didn’t have whey, and when I went to buy some whey they gave me protein whey at the health shop I wasn’t sure it was the same , will it work?

No. Liquid whey is the liquid from yogurt and is a living food. Protein whey would not be the same for fermenting.
Could I use coconut water kefir instead of whey?
Depending on where you live, and your own personal taste, there are many varieties of apple suitable for juicing. Do a little research to find an apple which produces a good, sweet juice. Honeycrisp, McIntosh, Red Delicious, Gala, Fuji and Pink Lady are amongst the best varieties for juicing. Try blending them together.
There are brands of apple juice fortified with vitamins, but that isn’t enough for some. One registered dietitian says that if the juice wasn’t healthy initially, adding vitamins isn’t the way to make it a healthy alternative. Of course, all juices sold in America must be meet certain safety standards.
