Cafe Latte Gelatin Gummy Bears

My friend, Caitlin, aka The Grassfed Girl, has graciously allowed me to share this awesome gelatin gummy bears recipe. It is from her new e-book, Easy Paleo Gelatin Treats.
I made these and they are delicious! I am a coffee ice cream lover and the flavor reminded me somewhat of that. If you don't have the gummy bear molds, you can use any molds or just pour mixture into a glass container and slice into squares.
Cafe Latte Gummy Bears
Ingredients
- 1 cup strong coffee decaf water processed coffee, dandelion coffee substitute
- 3 tbsp grass fed gelatin
- 2 cups full fat canned coconut milk or 1 13-15 oz can
- 1/2 tsp stevia powder extract or 1/4 cup coconut sugar
Instructions
- Mix the coffee and the gelatin in a bowl.
- Heat up the coconut milk over medium heat until it is warm.
- Add the coffee mixture and sweetener and stir for two minutes.
- Pour the mixture into a greased ice tray or silicone gummy bears.
- Refrigerate for one hour or until set.
- Serve and enjoy.

OMG, I’ve heard of boozy gummy bears, but this takes the cake. The mould used it also cute!
Hi, Do these come out slimy? I’ve made another recipe of them with cream before and the texture was gross and slimy. I hate to waste ingredients.
